Handcrafted Sausage

Here at Pelkins, we take the art of sausage making seriously with a hands-on approach. In our processing room, using USDA inspected meat, we hand measure high quality spices into the ground meat. We hand mix each 25# batch and hand stuff the casings. Then it is off to the smoking room to be smoked to perfection. Once cooled it goes to our finishing room to be hand cut and packaged.
